Method
 

Step-by-Step Instructions
  1. Preheat your oven to 400°F (200°C) and lightly grease a 9x13 baking dish with olive oil.
  2. Combine chicken strips with olive oil, lime juice, and fajita seasoning mix. Marinate for about 10–15 minutes.
  3. Add sliced bell peppers and onions to the marinated chicken and toss until well-coated.
  4. Layer half of the chicken-vegetable mixture in the baking dish. Top with half of the diced tomatoes and 1 cup of shredded cheese, then repeat layers.
  5. Cover with foil and bake for 20 minutes. Remove foil and bake for another 10–15 minutes until cheese is melted and golden.
  6. Optionally, broil for 2–3 minutes at the end for a crispy cheese layer.
  7. Let it rest for 10–15 minutes before garnishing with cilantro and serving.
