- Preheat your oven to 400°F (200°C) and lightly grease a 9x13 baking dish with olive oil.
- Combine chicken strips with olive oil, lime juice, and fajita seasoning mix. Marinate for about 10–15 minutes.
- Add sliced bell peppers and onions to the marinated chicken and toss until well-coated.
- Layer half of the chicken-vegetable mixture in the baking dish. Top with half of the diced tomatoes and 1 cup of shredded cheese, then repeat layers.
- Cover with foil and bake for 20 minutes. Remove foil and bake for another 10–15 minutes until cheese is melted and golden.
- Optionally, broil for 2–3 minutes at the end for a crispy cheese layer.
- Let it rest for 10–15 minutes before garnishing with cilantro and serving.
