Method
 

Step-by-Step Instructions
  1. Begin by rinsing and drying the chicken thighs. Season generously with salt and pepper, and let rest for 15 minutes.
  2. In a skillet over medium heat, add diced bacon and sauté for 5-7 minutes until crispy. Remove and drain on paper towels.
  3. Add butter to bacon drippings in the skillet, increase heat, and sear chicken thighs skin-side down for 8-10 minutes until golden brown. Flip and cook for another 6-7 minutes.
  4. Lower heat and add remaining butter. Add sliced shallots and minced garlic, cooking for about 10 minutes until shallots are golden.
  5. Return chicken and bacon to the skillet, pour in white wine, scrape up browned bits, and add thyme. Season to taste.
  6. Preheat oven to 350°F (180°C). Transfer skillet to oven and bake uncovered for about 30 minutes.
  7. Remove from oven, let stand for 5 minutes before serving. Spoon the sauce over the chicken and enjoy.
