- Begin by rinsing and drying the chicken thighs. Season generously with salt and pepper, and let rest for 15 minutes.
- In a skillet over medium heat, add diced bacon and sauté for 5-7 minutes until crispy. Remove and drain on paper towels.
- Add butter to bacon drippings in the skillet, increase heat, and sear chicken thighs skin-side down for 8-10 minutes until golden brown. Flip and cook for another 6-7 minutes.
- Lower heat and add remaining butter. Add sliced shallots and minced garlic, cooking for about 10 minutes until shallots are golden.
- Return chicken and bacon to the skillet, pour in white wine, scrape up browned bits, and add thyme. Season to taste.
- Preheat oven to 350°F (180°C). Transfer skillet to oven and bake uncovered for about 30 minutes.
- Remove from oven, let stand for 5 minutes before serving. Spoon the sauce over the chicken and enjoy.
