Preparation
- Preheat your oven to 450°F (232°C) and line a baking sheet with parchment paper.
- Slice the green cabbage into six 3/4 inch thick rounds and place on the baking sheet.
- Brush each cabbage slice with olive oil and sprinkle with salt and pepper.
- Roast the cabbage for 15-20 minutes until crispy on the edges and softened in the center.
- Prepare toppings by shredding the Dubliner cheese, chopping scallions, and slicing corned beef.
- Layer whole grain mustard on each cabbage slice, followed by corned beef and shredded cheese.
- Return to the oven for an additional 5 minutes until the cheese melts and bubbles.
- Remove from oven, garnish with chopped scallions, and serve warm.
