Method
 

Dough Preparation

Rising

  2. Place it in a warm spot and let it rise until doubled in size, around 30-60 minutes.
Shaping Bites
  1. Preheat your oven to 450°F (232°C).
  2. Once the dough has risen, punch it down gently to release air.
  3. Divide the dough into 12 equal pieces, rolling each piece into a ¾-inch thick rope.
  4. Cut the ropes into 1-2 inch pieces to create bite-sized pretzel morsels.
Boiling Process
  1. In a large pot, bring 4 cups of water to a rolling boil, then carefully stir in ⅓ cup of baking soda.
  2. For each pretzel bite, drop it into the boiling soda solution for about 30 seconds, allowing it to puff slightly.
  3. Use a slotted spoon to retrieve the bites, placing them on a parchment-lined baking sheet.
Final Touches
  1. Brush the top of each pretzel bite with an egg wash made from the whisked egg and a bit of water for shine.
