Mushroom Caps
  • 16 pieces Baby Bella or White Mushrooms
Filling
  • 1 lb Shrimp (peeled & deveined) Can use pre-cooked shrimp
  • 8 oz Cream Cheese Low-fat option available
  • 1 tbsp Mayonnaise Greek yogurt can be substituted
  • 1 tsp Salt
  • 1 tsp Pepper
Topping
  • 1 cup Breadcrumbs Crushed crackers can substitute
  • 1/4 cup Grated Parmesan Cheese Omit for dairy-free option
  • 2 tbsp Unsalted Butter Olive oil or vegan butter as lighter alternative

Method
 

Preparation Steps
  1. Preheat your oven to 400℉ (200℃). Clean the mushrooms and remove their stems. Pre-bake the mushroom caps for 15 minutes.
  2. Pat the shrimp dry and sauté in a skillet with oil for 3-4 minutes, seasoning with salt and pepper. Add garlic and cook for an additional minute.
  3. Chop the sautéed shrimp finely once cooled.
  4. Mix chopped shrimp with cream cheese, mayonnaise, lemon juice, salt, and pepper until smooth.
  5. Combine breadcrumbs and melted butter in a bowl. Optionally add Parmesan cheese, then set aside.
  6. Fill each mushroom cap with the creamy shrimp mixture, then top with breadcrumb mixture.
  7. Bake the stuffed mushrooms for about 20 minutes, or until the topping is golden brown and crispy.
  8. Allow the mushrooms to cool for a few minutes before serving warm.
