  • 400 g Cadbury’s Mini Eggs Chop two-thirds finely for the dough; leave one-third coarsely chopped for topping.
  • 100 g Dark Chocolate Adds richness and depth; milk chocolate can also be used.

Method
 

Step-by-Step Instructions
  1. Cream unsalted butter and both sugars on medium-high speed for 3-5 minutes until light and fluffy.
  2. Add the eggs one at a time, mixing until fully incorporated, followed by the vanilla extract.
  3. Sift together flour, baking soda, and salt, then gradually mix into the wet ingredients until just combined.
  4. Gently fold in the finely chopped mini eggs and dark chocolate using a spatula.
  5. Using a cookie scoop, portion out the dough into 2cm balls and refrigerate for at least an hour.
  6. Preheat oven to 180°C (350°F) and bake for 12-15 minutes until edges are golden and centers look soft.
  7. Let cookies sit on the tray for about 10 minutes before transferring to a wire rack.
