Ingredients
  

For the Stew
  • 1 can Spam can substitute with other canned meats or tofu
  • 2 links Sausage use your favorite sausage or vegetarian alternative
  • 200 grams Firm Tofu recommended
  • 200 grams Rice Cakes can be replaced with thick noodles
  • 1 medium Onion yellow onions work best
  • 100 grams Enoki Mushrooms can substitute with button or shiitake mushrooms
  • 1 cup Kimchi choose any variety
  • 3 cloves Garlic minced
For the Sauce
  • 2 tablespoons Gochugaru (Korean red pepper flakes) adjust for desired spice level
  • 2 tablespoons Gochujang (Korean chili paste) substitute with sriracha if needed
  • 3 tablespoons Soy Sauce tamari for gluten-free
  • 1 tablespoon Mirin can replace with sugar and rice vinegar
  • 1 teaspoon Sugar swap with honey or agave if preferred
  • 1/2 teaspoon Black Pepper adjust to taste
For the Broth & Noodles
  • 4 cups Chicken Broth or vegetable broth for vegetarian
  • 2 packs Ramen Noodles any instant noodle variety
  • 1 cup Cheese optional, mozzarella or cheddar

Method
 

Preparation
  1. In a medium bowl, combine minced garlic, gochugaru, gochujang, soy sauce, mirin, sugar, and black pepper. Stir well until blended.
  2. In a large pot, layer sliced spam, sausage, and tofu evenly at the bottom.
  3. Add rice cakes, chopped onion, enoki mushrooms, and kimchi on top.
  4. Pour prepared sauce over layered ingredients. Add chicken broth until ingredients are almost covered.
  5. Cover the pot and bring to a gentle boil over medium-high heat, allow to cook for about 10 minutes.
  6. Add ramen noodles on top of the boiling broth. Optionally sprinkle cheese on top and cover again.
  7. Cook for an additional 5-7 minutes or until noodles are tender.
  8. Gently stir to combine layers. Serve hot in bowls, garnished with chopped green onions.
