Step-by-Step Instructions for Smoky Jalapeño Popper Meatloaf
  1. In a large mixing bowl, combine the ground beef, breadcrumbs, beaten egg, finely chopped onion, and diced jalapeños. Add Worcestershire sauce, smoked paprika, and salt and pepper to taste. Mix gently until just combined.
  2. Carefully fold in the cream cheese, shredded cheddar cheese, and crumbled bacon into the meat mixture.
  3. Preheat the oven to 350°F (175°C). Transfer the meat mixture to a greased loaf pan, shaping it into a uniform loaf. Bake for 45-50 minutes until the internal temperature reaches 160°F (70°C).
  4. Remove the meatloaf from the oven and let it rest for 5-10 minutes before slicing.
  5. While the meatloaf is resting, warm the ranch dressing in a small saucepan over low heat until smooth.
  6. Drizzle the warm ranch dressing over the sliced meatloaf just before serving.
