Preparation Steps
  1. Preheat the oven to 350°F (175°C).
  2. Pat the chicken thighs dry and season with salt and pepper.
  3. Heat olive oil in a Dutch oven and sear the chicken thighs for 4-5 minutes on each side until golden brown.
  4. In a mixing bowl, whisk together ketchup, vinegar, sugar, and spices to create the sauce.
  5. Pour half of the sauce into the Dutch oven, then place the seared chicken in the pot. Drizzle the remaining sauce over the chicken.
  6. Cover the Dutch oven and bake for 45 minutes.
  7. Remove the lid and bake uncovered for another 20-25 minutes to thicken the sauce.
  8. Let the chicken rest for a few minutes, then serve garnished with fresh parsley.
