Preparation Steps
- Preheat the oven to 350°F (175°C).
- Pat the chicken thighs dry and season with salt and pepper.
- Heat olive oil in a Dutch oven and sear the chicken thighs for 4-5 minutes on each side until golden brown.
- In a mixing bowl, whisk together ketchup, vinegar, sugar, and spices to create the sauce.
- Pour half of the sauce into the Dutch oven, then place the seared chicken in the pot. Drizzle the remaining sauce over the chicken.
- Cover the Dutch oven and bake for 45 minutes.
- Remove the lid and bake uncovered for another 20-25 minutes to thicken the sauce.
- Let the chicken rest for a few minutes, then serve garnished with fresh parsley.
