  • 1 medium Diced Pineapple Fresh fruit preferred
For the Syrup
  • 1 cup Granulated Sugar Also can use coconut sugar
  • 2 tablespoons Apple Cider Vinegar Can substitute with white vinegar or lemon juice
  • 1 teaspoon Ground Turmeric
  • 1/4 teaspoon Cayenne Pepper Adjust to taste for spice
  • 1 teaspoon Ground Ginger
  • 1/4 teaspoon Salt
For Coating
  • 1/2 cup Additional Granulated Sugar

Method
 

Step-by-Step Instructions
  1. Begin by dicing fresh pineapple into bite-sized chunks and placing them in a bowl.
  2. In a medium saucepan, combine granulated sugar, apple cider vinegar, ground turmeric, cayenne pepper, ground ginger, and salt. Place over medium heat, stirring until sugar dissolves and mixture bubbles.
  3. Once syrup is bubbling, carefully add diced pineapple. Stir gently to coat and let simmer for a few moments.
  4. Reduce heat to low and let simmer for 40-60 minutes until pineapple is translucent and syrup thickens.
  5. Using a slotted spoon, transfer the pineapple onto a cooling rack or parchment paper. Allow to cool completely.
  6. Once cool, roll each piece in additional granulated sugar until well-coated.
