- Preheat your oven to 400°F (200°C). Gather ingredients and equipment.
- Wash the potatoes, poke holes, coat with avocado oil, salt, and pepper. Bake for 50–60 minutes until fork-tender.
- Cool for 10 minutes, cut each potato in half, and scoop out insides into a mixing bowl.
- Add hot milk and butter to the potato flesh, mash until smooth, and season with salt and pepper.
- Spoon the filling back into the skins, top with beef bacon and shredded cheddar, then crack an egg on top.
- Lower oven to 375°F (190°C) and bake for 15–20 minutes until egg whites are set.
- Let cool for a couple of minutes, serve warm.
