Method
 

Step-by-Step Instructions
  1. Preheat your oven to 400°F (200°C). Gather ingredients and equipment.
  2. Wash the potatoes, poke holes, coat with avocado oil, salt, and pepper. Bake for 50–60 minutes until fork-tender.
  3. Cool for 10 minutes, cut each potato in half, and scoop out insides into a mixing bowl.
  4. Add hot milk and butter to the potato flesh, mash until smooth, and season with salt and pepper.
  5. Spoon the filling back into the skins, top with beef bacon and shredded cheddar, then crack an egg on top.
  6. Lower oven to 375°F (190°C) and bake for 15–20 minutes until egg whites are set.
  7. Let cool for a couple of minutes, serve warm.
