Cake Preparation
- Begin by gently heating whole milk in a saucepan until warm. Add Earl Grey tea leaves and steep for 10 minutes. Strain and let cool.
- In a large mixing bowl, cream together unsalted butter and granulated sugar until light and fluffy.
- Add eggs one at a time, mixing well after each. Then add vanilla extract and cooled tea-infused milk, blending until combined.
- In another bowl, sift together flour, baking powder, and salt. Gradually fold into wet ingredients until just combined.
- Preheat your oven to 350°F (175°C) and prepare two cake pans. Divide the batter and bake for 25-30 minutes.
- Allow the cakes to cool in the pans for 10 minutes, then transfer to wire racks to cool completely.
Frosting Preparation
- In a mixing bowl, combine sifted powdered sugar, heavy cream, and lemon zest. Beat until thick and smooth.
- Once the cake layers are cool, spread frosting on the top of one layer and place the other layer on top. Frost the entire cake.
