For the Frosting
  • 3 cups powdered sugar sifted
  • 1 cup heavy cream or full-fat coconut cream
  • 1 tablespoon lemon zest fresh is key

Method
 

Cake Preparation
  1. Begin by gently heating whole milk in a saucepan until warm. Add Earl Grey tea leaves and steep for 10 minutes. Strain and let cool.
  2. In a large mixing bowl, cream together unsalted butter and granulated sugar until light and fluffy.
  3. Add eggs one at a time, mixing well after each. Then add vanilla extract and cooled tea-infused milk, blending until combined.
  4. In another bowl, sift together flour, baking powder, and salt. Gradually fold into wet ingredients until just combined.
  5. Preheat your oven to 350°F (175°C) and prepare two cake pans. Divide the batter and bake for 25-30 minutes.
  6. Allow the cakes to cool in the pans for 10 minutes, then transfer to wire racks to cool completely.
Frosting Preparation
  1. In a mixing bowl, combine sifted powdered sugar, heavy cream, and lemon zest. Beat until thick and smooth.
  2. Once the cake layers are cool, spread frosting on the top of one layer and place the other layer on top. Frost the entire cake.
Garnishing
  1. Garnish with edible flowers, candied lemon peel, or ground Earl Grey tea.
