  • 4 cups mixed greens a mix of baby spinach and spring mix
  • 1 whole ripe avocado diced just before use
  • 1 cup cherry tomatoes halved
  • 0.5 whole cucumber sliced diagonally
  • 0.5 small red onion soaked in cold water for 5 minutes
  • 0.5 cup feta cheese crumbled
For the Dressing
  • 3 tablespoons olive oil a staple for dressings
  • 1 tablespoon fresh lemon juice freshly squeezed
  • to taste salt
  • to taste pepper freshly ground

Method
 

Preparation
  1. In a large salad bowl, combine 4 cups of mixed greens, 1 diced avocado, and 1 cup of halved cherry tomatoes. Toss gently.
  2. Slice half a cucumber diagonally and thinly slice half a small red onion. Combine with mixed greens, avocado, and tomatoes.
  3. Sprinkle 0.5 cup of crumbled feta cheese over the salad.
  4. In a small bowl, whisk together 3 tablespoons of olive oil, 1 tablespoon of lemon juice, and season with salt and pepper.
  5. Drizzle the dressing over the salad and gently toss to combine.
  6. Serve immediately, garnished with extra cherry tomatoes or fresh herbs if desired.
