  • 3 cloves Garlic minced
  • 1 medium Fresno Pepper or jalapeño
  • 1 tbsp Dried Oregano
  • 1/2 cup Extra Virgin Olive Oil high quality
  • 1/4 cup Red Wine Vinegar or another vinegar
  • to taste Salt
  • to taste Fresh Ground Pepper

  • 1 lb Jumbo Shrimp peeled and deveined
  • 1 tbsp Honey mild
  • 1 tbsp Smoked Paprika or regular paprika
  • 2 tbsp Extra Virgin Olive Oil
  • to taste Salt

Method
 

Preparation Steps
  1. Finely chop the parsley, garlic, and Fresno pepper by hand, then combine with oregano, salt, and pepper in a bowl.
  2. Stir in olive oil and red wine vinegar, allowing the chimichurri sauce to sit for at least an hour.
  3. In a mixing bowl, mix shrimp with olive oil, garlic, honey, smoked paprika, salt, and pepper. Marinate for 20 minutes.
  4. Heat a skillet over high heat and cook shrimp for 2-3 minutes on each side until opaque.
  5. Transfer cooked shrimp to a serving dish, drizzle with chimichurri sauce and toss to coat. Serve extra sauce on the side.
