Preparation Steps
- Prepare the pizza dough according to your preferred recipe or unwrap your store-bought dough. Preheat your oven to 475°F (245°C) with a pizza stone or baking sheet inside for 30 minutes.
- Slice the fresh mozzarella into roughly ½ inch pieces and pat them dry with paper towels.
- Stretch the dough into a rectangular shape (about 9x13 inches) on parchment paper, creating a border for the crust.
- In a jar, combine the olive oil, water, parsley, garlic, lemon zest, salt, and black pepper. Seal and shake vigorously until well-mixed.
- Make dimples all over the stretched dough. Pour the brine evenly over the dough and arrange the mozzarella slices on top.
- Slide the pizza onto the preheated stone or baking sheet and bake for 8 to 10 minutes until the crust is golden brown and cheese is bubbly.
- Remove from the oven and drizzle fresh lemon juice over the top. Sprinkle with parmesan cheese and fresh parsley before serving.
