Step-by-Step Instructions
  1. Preheat your oven to 475°F (245°C) for at least 30 minutes, placing a pizza stone or baking sheet inside to heat up.
  2. Slice fresh mozzarella into ½ inch pieces and pat dry with paper towels.
  3. On parchment paper, stretch your dough into a 9x13 inch rectangle and transfer to a pizza peel.
  4. In a jar, combine olive oil, water, parsley, grated garlic, lemon zest, salt, and pepper; shake until mixed.
  5. Dimple the dough surface, pour the brine over, and arrange mozzarella slices on top.
  6. Bake the pizza for 8-10 minutes until the crust is golden and the cheese is bubbling.
  7. Remove from oven, drizzle with lemon juice, sprinkle Parmesan, and serve hot.
