- Slice the mozzarella cheese into 3-inch long and ½-inch thick sticks and arrange on a tray.
- Set up the breading station: flour in the first bowl, whisked eggs in the second, and mixed breadcrumbs and seasonings in the third.
- Coat each mozzarella stick in flour, then dip in eggs, and coat thoroughly in the breadcrumb mixture.
- Freeze the coated mozzarella sticks in a single layer on a baking sheet for about 20 to 25 minutes.
- Heat avocado oil in a pot to 375°F (190°C) for frying.
- Fry the frozen mozzarella sticks for 1 to 2 minutes until golden brown, then drain on a wire rack.
- In a saucepan, melt butter and stir in cayenne pepper, brown sugar, smoked paprika, garlic powder, and hot sauce to prepare the glaze.
- Dip each fried mozzarella stick into the hot glaze and serve immediately with dipping sauce.
