  • 1 lb whole milk mozzarella cheese
  • 1 cup all-purpose flour
  • 2 large eggs whisked
  • 1 cup panko breadcrumbs substitute crushed cornflakes for gluten-free
  • 1 cup plain breadcrumbs opt for regular or whole wheat
For the Seasoning
  • 1 tsp cayenne pepper adjust for heat level
  • 1 tsp smoked paprika substitute with regular paprika if needed
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • to taste salt
  • to taste pepper
For Frying and Glaze
  • 2 inches avocado oil for frying
  • 4 tbsp unsalted butter
  • 2 tbsp brown sugar white sugar works as an alternative
  • 1 tsp chili powder optional
  • to taste hot sauce choose your favorite

Method
 

Step-by-Step Instructions
  1. Slice the mozzarella cheese into 3-inch long and ½-inch thick sticks and arrange on a tray.
  2. Set up the breading station: flour in the first bowl, whisked eggs in the second, and mixed breadcrumbs and seasonings in the third.
  3. Coat each mozzarella stick in flour, then dip in eggs, and coat thoroughly in the breadcrumb mixture.
  4. Freeze the coated mozzarella sticks in a single layer on a baking sheet for about 20 to 25 minutes.
  5. Heat avocado oil in a pot to 375°F (190°C) for frying.
  6. Fry the frozen mozzarella sticks for 1 to 2 minutes until golden brown, then drain on a wire rack.
  7. In a saucepan, melt butter and stir in cayenne pepper, brown sugar, smoked paprika, garlic powder, and hot sauce to prepare the glaze.
  8. Dip each fried mozzarella stick into the hot glaze and serve immediately with dipping sauce.
