- Preheat your oven to 400°F (200°C) and lightly grease a baking dish.
- Peel and thinly slice the Yukon gold potatoes into even rounds, then soak in cold water.
- Melt the butter in a pot over medium heat and sauté the minced garlic for 1 minute.
- Sprinkle the flour over the melted butter and garlic, stirring for 1-2 minutes.
- Gradually whisk in the heavy cream, cooking for about 5 minutes until thickened.
- Remove from heat, stir in grated Parmesan, thyme, salt, and pepper.
- Drain potatoes and combine them with the sauce until well-coated.
- Layer the potatoes in the baking dish, adding remaining sauce and sprinkle more cheese on top.
- Cover with foil and bake for 30 minutes, then remove foil and bake for another 30 minutes.
